As part of my new healthy eating approach to food I thought I'd try and find an alternative to crisps. I know you can get vegetable crisps but the shop bought versions have a similar number of calories as regular crisps. These caramelised apple crisps are SO delicious, I couldn't stop myself eating them - luckily it's one of my five a day!
What you'll need:
3x Apple (your favourite variety), sliced very thinly
1 cup of Caster or Granulated Sugar
1 cup of Water
What to do:
1) Preheat oven at 220'C. Lightly grease a wire rack (I just used my grill tray) and place into a baking tray (if not using a grill tray).
2) Put the water and sugar into a saucepan and bring to the boil, stirring frequently.
3) Place the apple slices into the sugar/water solution, turning down the heat to a simmer. Cook the apples, stirring frequently, until the sugar/water solution has thickened. This should take around 10 minutes.
4) Using tongs, remove the apple slices and place onto the greased wire rack. Ensure that there is only one layer of apple slices on the rack, so that they can crisp up in the oven. Bake in the oven for 10-15 minutes. When you remove them from the oven they will feel soft but once they cooled they should have become crispy.
5) Enjoy as a snack or with ice-cream!

It's a lovely alternative to crisps. Another healthy snack I adore is to roast chickpeas with some spices and herbs in the oven - yummy! :o) Xx
