WEANING: Banana Rice Pudding Recipe

Coming up with a variety of puddings has been hard, so it has usually ended up being yogurt with a fruit puree stirred through or just pieces of fruit. I really don't want to get in a food rut with Isabella's diet and am keen to try and keep it exciting and varied. I had seen that you can give babies rice pudding, but wasn't sure about using the shop bought versions as they are often very high in sugar. So I made this no sugar version, which makes an ideal pudding for babies and toddlers. 
What you'll need:
500ml Full Fat Milk
1 Banana, mashed
50g Arborio Rice or Pudding Rice (I used arborio)
1 1/2 tsp Vanilla Extract

What to do:
1) Add the milk, vanilla extract and rice into a saucepan. Bring to the boil, stirring regularly, and simmer for 30-45 minutes. You want to simmer it until the rice is completely cooked (there's no 'bite' left to it) and you'll find that the amount of liquid has reduced significantly. 
2) Take off the heat and stir in the mashed banana. Leave to cool and serve. You could always mix up the fruit added - blitz berries would be nice or stewed apple and cinnamon would be the perfect autumnal dessert.

  5. My little one loves rice pudding, any rice works well - we tend to use long grain. Will have to give this one a go, it'll make a change to our usual coconut milk recipe. Thanks for sharing!
