WEANING: Tortilla Bowl with Spiced Beans and Chargrilled Sweetcorn

This is actually a meal I was making for myself and realised there was no reason Isabella couldn't have it. I just had to make a few minor tweaks, I served feta with mine and popped some chilli flakes in, which I didn't do with Isabella's. It's so quick to whip up, so perfect for those busy days yet so full of flavour - a winning combination in my book. I used a can of mixed beans but you could use black beans instead, whichever you prefer or have in the cupboards. Isabell enjoy eating the tortilla bowl broken up as finger food and I spoon fed her the bean mixture, though it would work well for BLW too.

What you'll need:
(Makes 4 portions)
1 Can of mixed beans, drained
1 Large onion, finely diced
1 1/2 tsp Ground coriander
1 1/2 Ground cumin
4 Mini tortilla wraps
1 Can Sweetcorn, drained
1 tbsp Olive oil
for the tomato sauce
1 Carton of passata
2 Garlic cloves, crushed
1 tbsp Tomato puree 

What to do:
1) Preheat the oven to 200'C. Fry the crushed garlic cloves and tomato puree for the tomato sauce for 1 minute over a medium-high heat. Add the passata and simmer until it has reduced by about a third, which usually takes around 10 minutes.
2) For the spiced bean mixture heat the olive oil in a saucepan over a medium heat. Add the onions and fry for 8 minutes or until almost cooked. 
2) Add the spices and fry for 2 minutes. Finally add the beans and mix well. Cook for a further 5 minutes.
3) Meanwhile pop a tortilla wrap in the microwave for 40 seconds, so that you can shape it without it breaking. Put into an ovenproof bowl, so that it resembles a bowl and bake for 5 minutes in the preheated oven. 
4) For the chargrilled sweetcorn just add the sweetcorn to a dry frying pan over a high heat. Keep moving the kernels around until they become brown and slightly toasted. Set aside.
5) To assemble the meal take the cooked tortilla wrap bowl out of the dish, it will hold it's shape if it's been cooked for long enough. Fill it with the bean mixture, top with a spoonful of the tomato sauce and sprinkle with sweetcorn. You could also add chunks of avocado, fresh coriander, grated cheese etc.
