RECIPE: Apple Bircher Muesli

 
 This is an ideal quick breakfast for those mornings you should have left the house five minutes ago, as it's ready to go and super tasty. All you have to do in place all of the ingredients into a container the night before, leave it to do its thing overnight and enjoy with a sprinkle of mixed nuts/dried fruit in the morning. I always make this for Isabella in a jam jar because that way I don't even need a spoon to mix it the night before. This recipe isn't exclusive to weaning babies, adults can enjoy it too. I prefer to add a squeeze of Sweet Freedom for a bit of sweetness, though since weaning Isabella I always feel so bad not letting her having sugar while I'm sprinkling everything and anything with the stuff!

 
What you'll need:
4 tbsp Porridge oats
 1 Apple, grated
Full fat milk
Squeeze of lemon juice
Cinnamon, optional
for topping
2 tsp Mixed unsalted chopped nuts, finely chopped
(I used pecans, walnuts, almonds, Brazil nuts and peanuts)
2 tsp Dried Fruit, finely chopped
(I used raisins and apricots)

What to do:
1) Place the oats, apple, cinnamon and lemon juice into a jam jar or air tight container. Pour in enough milk to completely cover the oat mixture, stir. Leave in the fridge overnight.
2) In the morning remove the oat mixture from the fridge and give it a good stir. You can either serve it straight from the jam jar or spoon a portion into a bowl. Sprinkle with the chopped nuts and dried fruit and serve.
