This is a simple, healthy and quick breakfast to whip up for your little one in the morning. By cooking the apple wedges slightly they become caramelised in their natural sugars and it means that Isabella is able to actually eat it rather than just chew at raw apple. As with most of the recipes I put on here you can mix it up - add different berries to the blueberries, use pear wedges instead of apple etc.
What you'll need:
1/2 Apple, sliced into wedges
1/2 tsp Cinnamon or ginger or a combination of them both
Small knob of unsalted butter
Small handful of blueberries
As much Greek yogurt as your little one usually has
What to do:
1) Heat the butter in a frying pan over a medium-low heat. Sprinkle the apple wedges with cinnamon or ginger and place into the pan. Fry for a couple of minutes on both sides, so that the outside is beginning to caramelise.
2) Remove the apple wedges and place on a piece of kitchen roll. Allow to cool slightly.
3) In the same pan add the blueberries and return to the heat. Cook until the blueberries are beginning to burst and breakdown, creating their own sauce. Remove from the heat and cool.
4) Spoon the Greek yogurt into a bowl, top with blueberry compote and serve with the spiced apple wedges.
