These are a seriously quick and easy child friendly recipe to whip up in the morning and to enjoy of the next few days. Especially if you like to start your day with a smoothie anyway, just make a bit extra, mix it with egg and coconut and bake. You could of course add anything you like into them - raisins, nuts etc. Isabella enjoys these as a snack throughout the day or at breakfast time instead of toast. It's also a good way of getting the goodness from eggs in her, as she's not the biggest fan of scrambled egg.

What you'll need:
Approx 150ml Berry Smoothie
(I used some of my leftover berry smoothie - frozen berries, natural yogurt, banana and water blitz together until smooth)
2 tbsp Desiccated coconut
1 Egg, beaten

What to do:
1) Preheat the oven to 180'C. Make your smoothie by blitzing the ingredients together in a liquidiser or with a hand blender.
2) In a bowl combine the coconut, berry smoothie and egg together. Pour into a silicone mini muffin tray.
3) Bake for 20 minutes or until slightly browned and completely set. Leave to cool and serve as a tasty child friendly snack or for breakfast.
