RECIPE: Mixed Tomato, Mozzarella and Ricotta Tart

If you're after a family friendly meal that takes minimum effort and time, but is full of flavour then this is the one for you. Ready rolled puff pastry is such a versatile base and is easy to make vegetarian/meat options for my husband and I. This recipe is inspired by the home grown tomatoes my mother-in-law kindly gave to us. We had a bag full of delicious, fresh mixed tomatoes, so I wanted to create a delicious meal with minimum effort. The combination of mozzarella, tomato, ricotta and basil is classic Italian - any leftovers also make for a tasty lunch.
What you'll need:
(Serves 4)
1 pack of Ready Rolled Puff Pastry
1/2 tub Ricotta
2 Handfuls of Mixed Tomatoes
1/3 tub Garlic and Herb Soft Cheese
Handful of Mini Mozzarella balls, halved
1 tsp Dried Italian Herbs
Small handful of Basil, torn
Black Pepper

What to do:
1) Preheat your oven to 180'C. Unroll the pastry and place on a baking tray (on the greaseproof paper it comes with).
2) Mix together the soft cheese and ricotta, then spread over the pastry. Leave a 1cm border around the outside.
3) Halve or slice the tomatoes depending on their size and arrange onto top of the ricotta mixture. Add on the halved mini mozzarella balls until the pastry is completely covered.
4) Bake in the oven for 20 minutes or until golden brown - no soggy bottoms wanted here!
5) Cut into quarters, sprinkle with fresh basil and enjoy with homemade potato wedges or a mixed salad.

  4. Oh I've never tried something like this before. I'm absolutely starving now looking at this. I've never tried puff pastry before other than for vol au vents
