RECIPE: No Refined Sugar Gingerbread Men
Gingerbread men are a childhood classic, with many being decorated at various occasions throughout the year. They're easy to adapt for Valentine's Day, Easter, Halloween, Christmas and Birthdays. As we still keep Isabella's sugar intake limited I decided to bake these gingerbread men with no refined sugar in. It was a fun rainy day activity and I split the dough in half and froze one half, that way we have an emergency stash for days when it's miserable outside. But these aren't exclusive to toddler's, they're perfect if you're being healthy and avoiding refined sugar.  

What you'll need:
4tbsp Sweet Freedom Fruit Syrup
2 tsp Stevia (I used Truvia)
300g Plain Flour
125g Unsalted Butter
1/2 tsp Nutmeg
1/2 tsp Cinnamon
2 tsp Ground ginger
1 tsp Bicarbonate of Soda

What to do:
1) Preheat the oven to 190'C. Line two baking trays with greaseproof paper. Melt the butter, fruit syrup and stevia in a saucepan over a low heat.
2) Once completely melted take off the heat and add in the spices, bicarbonate of soda and sieve in the plain flour.
3) Mix until a dough is formed and gather into a ball. Remove the greaseproof paper from the trays and split the dough in half.
4) Place each half on the pieces of greaseproof paper. Roll the dough out one at a time, so that it is around 0.5mm thick.
5) Cut out your desired shape, remove the excess around the edges and remould to cut out more shapes. Repeat with the other half of the dough.
6) Place in the oven and cook for 6 minutes. All of my shapes were on the smaller side, if you have bigger ones then they may need a minute or so longer.
7) Transfer onto a wire rack to cool.

  8. This recipe sounds great! I'm trying to have a bit less refined sugar at the moment (slowly working my way down on it!) and I LOVE gingerbread men, so this is a really good idea, thanks for sharing :)
