RECIPE: Seriously Indulgent Brownie Millionaire's Shortbread
Millionaire's Shortbread is such a popular sweet treat, but why not make it that extra bit indulgent by adding a layer of brownie in there too? When it comes to baking, two of my husband's favourite things I make are shortbread and brownies, which is where the idea for this recipe originated from. I wondered whether I could combine these two delicious traybakes into one seriously indulgent Brownie Millionaire's Shortbread. A few 'experiments' later and you have a buttery shortbread base, gooey chocolate filled brownie layer, smooth caramel and a thick layer of milk chocolate to top it all off. Certainly a treat and a small slice is more than enough; perfectly paired with a cup of tea if you ask me. 
To make this recipe even easier, quicker and more simple I have made the most of the ready-made brownie mixes you can pick up in the supermarket. You can always make your own brownie from scratch if you have a favourite recipe, but as I have three children and time is limited I am a big fan of the ready-made brownie mixes. You can use your favourite one; personally I like the Cadbury Chocolate Brownie Mix or Betty Crocker Triple Chocolate Chunk Brownie Mix or Betty Crocker Chocolate Fudge Brownie Mix. I do like to add extra white and milk chocolate chunks to whichever brownie mix I use, just to add a bit of texture. 
What you'll need:
for the Brownie Layer
1x Brownie Mix (plus, the necessary extra ingredients needed for your choice of brownie mix e.g. eggs, oil and water)
100g Milk Chocolate, broken into chunks
100g White Chocolate, broken into chunks
for the Shortbread Layer
125g Unsalted Butter
55g Caster Sugar
180g Plain Flour
for the Caramel Layer
1/2 397g can of Caramel
for the Chocolate Top Layer
250g Milk Chocolate, broken into chunks
White chocolate for piping on a pattern, optional 


What to do:
1) Preheat your oven to 190'C and line a baking tin with non-stick greaseproof paper.
2) Beat the butter and sugar together until smooth and light. 
3) Stir in the flour to create a smooth paste. Don't overmix it.
4) Tip the shortbread paste into your lined baking tin, use the back of a spoon to press it evenly across the base of the tin. You want to make sure that the shortbread is tightly packed and even.
5) Place into the oven to bake for 15-20 minutes or until the top is starting to turn golden brown. 
6) While the shortbread is cooking make up the brownie mix and add the extra chocolate chunks for total chocolate heaven.
7) Remove the shortbread from the oven and pour on the brownie mix straight on top. Place back in the oven for 30-40 minutes or until the brownie is cooked through.
8) When the brownie is cooked keep it in the tin and leave it to cool down completely. Once cool spread over the caramel to create an even layer across the brownie and place in the fridge to set for 1-2 hours.
9) To make the chocolate top layer place the chocolate chunks in a microwavable bowl and melt in the microwave in 20 second bursts. Be careful not to burn the chocolate. 
10) Once smooth and melted pour the chocolate over the caramel layer and return to the fridge to allow the chocolate to set completely. 
11) You can also pipe on a pattern or design using white chocolate if you'd like to at this point. 
12) Once everything is set remove the brownie millionaire's shortbread slab from the baking tin and cut into relatively small pieces, as it is very rich. Enjoy with a good cup of tea!
