RECIPE: Betty Crocker Chocolate and Oreo Muffins

 Chocolate, Oreos and more chocolate - the perfect 'pick me up' for these crisp evenings. They are so quick and easy to make I'm seriously considering making these for every special occasion! The 'easy' aspect of this recipe is the Betty Crocker Chocolate Chunk Muffin Mix, with muffin cases. As with most ready to use cake mixtures you need to add an egg and water, no weighing or gradual mixing! Ideal for those moments you just need something chocolaty but don't have the energy to cook for hours. I also like to add more chocolate chunks to these ready mixes, I added some white chocolate roughly chopped to these muffins.
 
You'll need:
 
Betty Crocker Chocolate Chunk Muffin Mix
1x Egg
Oreo biscuits
50g White Chocolate, optional
 
 
What to do:
 
1. Preheat the oven at 190'C. When you open the muffin mix you'll find a bag of mixture, empty this into a bowl and break up any larger lumps of powder.
 
 
2. I decided not to use the provided muffin cases as my tray wasn't deep enough, so I used these colourful cupcake cases instead. Place 1 or 2 (you can put 2 in each muffin space, this helps to hold the shape of the muffin and is what I did) muffin cases into each section in a muffin tray. Drop in an Oreo into each muffin case.   
 
 
3. I added in the roughly chopped white chocolate into the dry muffin mixture and mixed well. It's important to try and get the chocolate evenly distributed, so that every muffin has lots of chocolaty goodness in! Next gradually add the egg and water, mixing well after each addition.
 
 
 
4. Once it's completely mixed, the mixture will be lumpy due to the very important chocolate chunks! Spoon the mixture evenly between the muffin cases, it makes between 6-8 muffins.
 
 
5. Place them in the oven for approximately 15-20 minutes. As soon as you can poke a knife into the muffin and it comes out clean (ignoring any melted chocolate on the knife) you can take them out of the oven. Leave them for 5 minutes to cool down slightly and then remove them from the tray.   
 
 
 
6. The most exciting part is when you cut them in half and see that Oreo surprise at the bottom!
 

As much as I really didn't want to give these away, I packed them up in this lovely cupcake box from Cake Craft World (previously mentioned in this post here), and gave them to my brother for his birthday!
