Goat's cheese is one of my absolute favourite cheeses - I think it stems from my love for Pieminister's Heidi Pie, which contains roasted sweet potato and goats cheese! This recipe is one that Tom will often cook, I'm not sure about all men but Tom has a small handful of recipes that are 'his'! If I even attempt to make them when he's there he'll take over in no time, so I made this when he was away - oh the secrecy!
What you'll need:
100g Goats Cheese, sliced
3 Fresh Figs, sliced
2 Red Onions, sliced
1/2 pack of ready rolled Puff Pastry
Sunflower Oil
FryLight
Dried Chilli
Thyme
What to do:
1) Preheat the oven at 190'C. Line a baking tray with foil and spray with Frylight. Then put the ready rolled puff pastry on to the foil.
2) Roast the sliced onions with the dried chilli and thyme for around 30 minutes, or until cooked through. Pile the onions onto the ready rolled puff pasty, leaving a small edge around the whole tart.
3) Place the sliced figs and goats cheese all over the onions. Bake in the oven for 20-25 minutes or until golden brown. Enjoy with minted greens!

This looks yummy! Only problem is I have a real fear of figs (something involving a fig tree, fresh fig and a maggot or two - I won't go into detail!) could I swap them for something else?

Oo gosh that sounds awful! You could just do caramelised onion and goats cheese tart - lots of thyme in the onions :)
