FOOD: Peach and Almond Tart Recipe

The other day I was in a 'baking' mood (I'm blaming Great British Bake Off!) so I hunted around the kitchen to see what I could whip up. We had a ton two packs of peaches and that was pretty much it - my options were limited.

I decided to have a go at creating an easy, quick peach and almond tart because time is precious and Isabella won't stay occupied forever! Some may say using a shop bought pastry case is lazy but I say it's time saving and ingenious. Of course if you are lucky enough to enjoy a leisurely baking session then you could make your own sweet shortcrust pastry. 

What you'll need:
1x Sweet Pastry Case (I used Sainsburys Taste the Difference)
100g Caster Sugar
140g Unsalted Butter, at room temperature
2 Eggs, beaten
140g Ground Almonds
50g Plain Flour
2 Ripe Peaches, sliced evenly
1 tbsp Apricot Jam
Vanilla Cream, to serve

What to do:
1) Preheat the oven to 180'C and place the pastry case onto a baking tray.
2) Whisk the sugar and butter together until it creates a pale paste. 
3) Beat in the eggs, almonds and flour, until completely combined.
4) Spoon the mixture into the pastry case and flatten out. 
5) Arrange the peach slices on the top, gently pressing them slightly into the almond mixture.
6) Bake for 40-50 minutes or until the almond mixture is cooked (check with a skewer - when it comes out clean it's done). Transfer to a wire rack to cool.
7) Put the apricot jam into a small bowl and microwave for 10 seconds, just to loosen it slightly. Once the tart is cool spread the jam over the top to give it a lovely shine - I used a spatula to do this.
8) This is delicious served with vanilla cream or creme fraiche.
