FOOD: 3 Recipes each with 3 Ingredients

 
When I was preparing for the Macmillan Coffee Morning I hosted (you can read about it here) I wanted to try some new recipes but didn't have the luxury of lots of time. After some googling and looking in our cupboards I came across the concept of using only 3 ingredients to create delicious treats. Perfect - fewer ingredients saves time, money and washing up - win, win, win. I have tried and adapted three different recipes, all of which have only 3 ingredients!
Banana and Oat Bites
These are very baby/child friendly too, as they don't contain any added fat, sugar or salt.  
 
What you'll need:
2 bananas
Cup of Oats
1/2 tsp Cinnamon 
Handful of raisins, optional 
(could substitute raisins with chocolate chips, desiccated coconut etc or just leave this ingredient out)
 
What to do:
1) Blitz the banana and most of the oats in a small blender until combined but not completely smooth. See above image.
2) Stir in the rest of the whole oats and the raisins.
3) Scoop out teaspoon sized amount of the mixture and place onto an oiled baking tray.
4) Bake for about 7-10 minutes at 190'C or until solid and lightly browned.
 
Ta-Dah!
 
Peanut Butter Bites 
One for those peanut butter addicts out there. You can use sugar in this recipe, but I wanted to reduce the sugar and calotie content so tried them with Dark Sweet Freedom and it worked perfectly. 
 
What you'll need:
1 Cup of Peanut Butter, crunchy or smooth
1 Egg, beaten
6 Tbsp Dark Sweet Freedom
 
 
What to do:
1) Combine the ingredients together in a bowl until combined.
2) Using your hands, make ping-pong sized balls and place them on an oiled baking tray. Using the back of the fork (that has been dipped in water otherwise it will stick to the dough) press gently down on each ball, creating the below look.
3) Bake at 180'C for 6-8 minutes, or until lightly brown. 
 
Nutella Brownies
If you don't know about these already and you like Nutella - your life is about to change forever. Just make sure you don't overcook these, as they will become too dry and lose their brownie squidgy texture. 
 
What you'll need:
2 Eggs, beaten
3/4 cup Nutella
1/3 cup Plain Flour 
(At first I made it with self-raising flour but they puffed up too much and didn't have a gooey texture)
 
What to do:
1) Combine all of the ingredients in a bowl, until you get a smooth mixture.
2) Pour into a lined square baking tray with raised edges. Bake for 20-30 minutes - it's important to keep checking them as you still want them to be a bit wobbly to ensure a squidgy texture.
3) Leave to cool in the tin. Once cool cut into squares and devour the lot!
