The other day I had the eager to make something new for Isabella to try, so I hunted in our cupboards and fridge to see what we had. After finding Greek yogurt and cream cheese I decided to make Isabella mini cheesecakes that had no added sugar and that would be ideal for her to enjoy as finger food. The cheesecake part was easy to come up with, but I was a bit stuck on how to create the biscuit base without any sugar involved. I also wanted to be able to quickly make a batch of these cheesecakes that evening, so they'd be ready for Isabella to enjoy the next day. By using Organix Banana Baby Biscuits (also available in Strawberry or Vanilla flavours, which woudl work just as well) it saved so much time, ensured there was no added sugar and meant that a batch of these was made in under 5 minutes!
What you'll need:
(Makes around 8 mini cheesecakes)
2 tbsp Cream cheese
2 tbsp Greek yogurt
I used Total - it needs to be a thick and creamy version
Handful of raspberries
1/2 tsp Vanilla extract
for the base
5 Organix Banana Baby Biscuits, crushed
15g Unsalted butter, melted
What to do:
1) Combine the melted butter and crushed biscuits together and press into each base of a silicone mini muffin tray. Place in the fridge to set.
2) While that's setting make the filling - beat the vanilla extract, cream cheese and Greek yogurt together until combined. Stir in the raspberries, ensuring not to stir too much and completely break up the raspberries.
3) Spoon the cheesecake filling on top of the biscuit bases and return to the fridge to set over night.
