WEANING: Oven Baked Fish, Chips and Peas Recipe

Fish and chips is a British classic, but all that batter and fat doesn't make it a very baby friendly meal. But with a couple of tweaks it can be a highly nutritious meal for babies, children and adults alike. By oven baking both the fish and chips it reduces the fat content, without losing the crisp outer shell and soft inside. As Isabella enjoys finger food at lunch time I make this for her while she's napping in the morning. It's quick and simple to cook - you could even make extra for a cheeky fish finger sandwich for yourself!

 
What you'll need:
1 Egg
250g Cod fillets
50g Polenta
50g Dried Natural Breadcrumbs
1 tsp Dried Parsley
Black pepper
Olive oil 
Potatoes, scrubbed and chopped into 'chips'
Frozen peas

What to do:
1) Preheat the oven at 200'C. Place the chopped potatoes onto a baking tray lined with greaseproof paper and drizzle with olive oil. Bake for 20-30 minutes or until golden brown and cooked through. Set aside.
2) Beat the egg in a bowl. Cut the cod fillets into strips. 
3) Sprinkle the polenta, dried parsley, black pepper and dried natural breadcrumbs onto the lined baking tray you used for the potatoes. Mix well.
4) Dip the fish strips into the egg and then coat in the polenta mix. Ensure the fish is completely coated.
5) Leave the coated fish on the baking tray, drizzle with olive oil and cook for 15 minutes. Turn the fish fingers over and cook for a further 5 minutes. The cooking time will depend on the size of your fish fingers, always check that it's completely cooked through.
6) Microwave the frozen peas in a bowl with a splash of water for 2 minutes. Serve with the slightly cooled fish fingers and chips.
