RECIPE: Carrot and Thyme Savoury Flapjack

 
 Sweet flapjacks are a tasty treat, but their high sugar content makes them not very friendly for babies and toddlers. So I thought I'd have a go at making some savoury flapjacks that have no added sugar and perfect for lunch or snack time. These take a matter of minutes to prepare and are great for freezing too. I've used carrots, but you could use grated parsnips, swede, courgette (with the moisture squeezed out) etc. 

What you'll need:
3 Carrots, grated
4 tsp Soft Cheese
 30g Mild cheddar cheese, grated
Porridge oats 
2 tsp Coconut oil, melted
1 Egg
 1/2 tsp Dried oregano
1-2 tsp Fresh thyme leaves 
Black pepper

What to do:
1) Preheat the oven to 190'C. Line a baking tin with greaseproof paper.
2) Combine the carrots, soft cheese, cheddar cheese, coconut oil, oregano, egg, thyme and black pepper in a bowl. Add enough porridge oats to bring the mixture together - I used around 100-150g. The mixture should be moist and moldable, so that when you pack it into the tray it will stay together.
3) Press the carrot mixture into the lined baking tray until it's smooth and tightly compacted.
4) Bake for 25 minutes or until golden brown. Leave to cool for 5 minutes and slice into bars/squares. Then leave to cool completely, though they are delicious served slightly warm.
