PARTY: How to Make and Decorate Ice-Cream Biscuits
After deciding on an ice-cream themed party for Isabella and Poppy my attention turned to what I could make, bake and create. I love adding my own personal twist to any special event I host, so the girls joint party was the perfect opportunity to get creative and browse Pinterest at length! I've put together a blog post with all the ice-cream party inspiration you'll need and how the party actually turned out, in case you're also in party planning mode.

Something that kept coming up on Pinterest were ice-cream iced biscuits, so I felt inspired to have a go myself. Years and years ago I spent some time trying to teach myself how to ice biscuits, as you do, but never got anywhere near mastering it. There is a lot of skill involved in creating the beautiful creations places like Biscuiteers offer, but if you're willing to give it some time then you too can ice your own biscuits. Buying them already iced can get really expensive, especially if your catering for a party, so having a go yourself is a good way to keep costs down. The most 'expensive' part is your time, as I have always found it take a good few hours to get to the final biscuits. 
For the biscuits I used the Biscuiteers Vanilla Biscuit Recipe, which you can find here. It was a slightly lengthy recipe to follow, but they tasted delicious and didn't change shape during baking. It is well worth reading their Golden Rules for Rolling Dough as well because it will give you the steps to achieve an even bake. To make the ice-cream cone shaped biscuits I had to cut out a template out of card and then cut around it with a sharp knife. It certainly made the process longer, but I didn't have a big enough ice-cream cookie cutter. I also did the same thing for the ice lolly shaped biscuits, but used a heart cookie cutter for the rest. 
When it comes to the icing you'll need to mix up a batch of royal icing. I used the below recipe, which is plenty for icing all of the biscuits you'll make with the Biscuiteers Vanilla Biscuit recipe.

What you'll need:
450g Icing sugar
2 Egg Whites

What to do:
1) Place both ingredients into a large bowl and beat with a wooden spoon until light and smooth, which can take around five minutes. 
2) Split the icing into two bowls and use a cocktail stick to add a little bit of Ivory food colouring into one of the bowls. Stir really well and continue adding small amounts until you reach your desired colour. Repeat with the other bowl of icing and the Pink food colouring. 
3) You'll need two textures of royal icing to make the biscuits - line and flooding. The line icing needs to be about the thickness of toothpaste and the flooding icing needs to be about the consistency of thick custard. Take the Ivory icing and split into two bowls, with slightly more in one than the other. These two bowls will become your two consistencies of the same colour icing. Add a little water at a time to each bowl in order to create one for line icing and one for flooding. 
4) Place a disposable piping bag into a large glass (it makes filling the piping bag easier) and spoon in the line icing. Take another disposable piping bag and fill it with the flood icing. 
5) Make a small cut in the bottom for the line icing and a slightly larger cut in the flood icing piping bag. Now you're ready to ice!
When it comes to the icing patience is key, as you need to ice the outside line first and then let it dry. Then fill it with the flood icing and use a cocktail stick to ensure it is all covered smoothly. All of this does take time and the icing will dry out if left for a long time, so it's best to make sure you have a fair amount of time set aside. Having said this, I made these during a two hour nap Poppy had so it's not too long.

1) Take the line icing and keeping the pressure consistent pipe a line around the part you want to be the cone. Take into account any drips you want to have and pipe those in. 
2) Leave to dry for 5-10 minutes, then take the flood icing and pipe to fill in the middle. I tend to ice a big 'blob' in the middle and then use a cocktail stick to push the icing right to the edges where the line icing is. This part needs to be done quickly and one biscuit at a time, so that the icing doesn't set before you've finished. 
3) Next, take the pink line icing and pipe around the edge of the part you want to be pink ice-cream. Use a cocktail stick to ensure the pink line icing joins up neatly with the ivory line icing. Leave to set for 5-10 minutes.
 4) Use the pink flood icing to fill in the pink part of the biscuit and use a cocktail stick to ensure it is all smooth and linked together. If you want to add sprinkle to the top of your ice-creams then now is the time to sprinkle them into the wet icing.
 5) I also added some white royal icing (no food colouring added) to the tops of some of the ice-creams using the same method. Once the flood icing is set completely (takes around 30 minutes) then take the line icing and pipe on zig-zag lines on the cones to create the waffle look. Leave to set for a final time and you're done!
 6) For a fun twist on some of the ice-cream biscuits I drew on little faces using the Rainbow Dust Black Double-Ended Edible Food* Pen from Hobbycraft.
There you have it...a step-by-step guide for how to create these cute ice-cream iced biscuits. Once you get the hang of using royal icing the possibilities are endless!
