Lotus Biscoff Loaded Caramel Swirl Ice-Cream
Lotus Biscoff Cookie Spread is a thing of dreams and almost always a guaranteed winner when it comes to baking, cooking and creating in the kitchen. Making ice-cream at home couldn't be easier and there are varying techniques that go from being a labour of love to being quick and easy. This recipe is a combination between ice-cream and frozen custard, which not only makes it really easy to make but also slightly lighter too. 
A popular way to make ice-cream at home is by combining double cream with condensed milk, which is seriously luxurious and incredibly moreish. But if you're looking for a lighter yet still creamy and luxurious ice-cream then this is the recipe for you. Making the base takes a matter of minutes, then all is left is to mix it up every couple of hours until frozen. The addition of a caramel swirl adds the perfect sweetness and also doesn't set completely hard, making it deliciously rich and smooth.
What you'll need:
200ml Double Cream, whipped to soft peaks
500g Custard
(I used a carton of ready-made custard from the shelf, rather than fresh custard from the fridge section)
2 tbsp Crème Fraiche, optional but does add a lovely richness and slight tang
1/3rd Jar of Lotus Biscoff Smooth Cookie Spead
4-6 Lotus Biscoff Biscuits, broken into pieces
3-4 tbsp Caramel
(I used one by Carnation) 


What to do:
1) Fold the custard and whipped double cream together with the crème fraiche until combined. 
2) Stir in the broken biscuits, spoon into a freezer-safe container and put into the freezer for one hour. 
3) After an hour use a fork to stir the ice-cream well, breaking up the ice crystals already made around the edges. This will help to create a smooth ice-cream once full frozen. Return to the freezer for 90 minutes. 
4) Remove from the freezer, stir well with a fork again and then swirl in the caramel. Return to the freezer until fully frozen, which will usually take 4-6 hours. 
5) To serve you can drizzle with more Lotus Biscoff Spread (microwave a tablespoon of the spread for 10-15 seconds to loosen it up and make it easier to drizzle), sprinkle with broken biscuits or enjoy in a cone.
