RECIPE: Lotus Biscoff Cookie Butter Cake

Lotus Biscoff Cookie Butter Cake Recipe
Lotus Biscoff Spread is a thing of beauty, isn't it? The caramelised, slightly spiced, flavours have the power to make anything it comes into contact with undeniable moreish. The combination of Lotus Biscoff Spread with a caramelised sponge and sweet buttercream is truly heavenly, which is why this cake has to be one of my favourites. It's perfect for afternoon tea, celebrations, play dates or for baking with your children. My daughter's absolutely love the flavour of Biscoff, which all started with my Lotus Biscoff Loaded Caramel Swirl Ice-Cream. By using light brown sugar in the sponge you create an almost caramelised flavour, which compliments the Biscoff favour perfectly.

You can use either Crunchy or Smooth Biscoff Spread in this recipe, depending on which you can find in the supermarkets. I used Crunchy to create this cake, which added an extra dimension to the buttercream and works well if, like me, you sometimes find buttercream a bit intense. The crunch breaks up the rich smoothness of the buttercream, which personally I love.
What you'll need:
270g Unsalted Butter
270g Light Brown Sugar
4 Large Eggs
270g Self Raising Flour
1 1/3rd tsp Baking Powder
2/3rd tsp Vanilla Extract 
Biscoff Buttercream
200g Unsalted Butter
400g Icing Sugar 
200g Biscoff Spread, Smooth or Crunchy
Decorations
Biscoff Biscuits
2 tbsp Biscoff Spread
Gold Star Sprinkles 
What to do:
1) Preheat the oven to 160'C Fan or 180'C and line two 20cm cake tins with non-stick greaseproof paper. 
2) Beat together the butter and light brown sugar until light and fluffy.
3) Add in the flour, eggs, baking powder and vanilla, beating briefly until well combined. Be careful not to overbeat at this point. 
4) Divide the mixture between the two tins and bake for 25-30 minutes or until a skewer comes out clean and they are golden brown. Leave to cool on a wire rack.
5) While the cakes are cooling make the buttercream by beating the butter to make it light and pale, before gradually beating in the icing sugar.
6) Add the biscoff spread to the buttercream and combine fully. To make this step easier I microwave the spread to loosen it slightly, but make sure it isn't too warm when adding to the buttercream otherwise the butter will melt! 
7) Now it's time to assemble your cake - place a small amount of buttercream on your cake board/plate (which stops the sponge from sliding around) and place your first sponge on top.
8) Fill a piping bag with your buttercream, snip the end off (you can use a piping nozzle, but for this cake I tend to just snip the end of the piping bag and it works really well) and pipe on a layer of buttercream on top of your first cake.
9) Carefully place the second sponge on top, ensuring it is central, and pipe another layer of buttercream covering the top of the cake.
10) Place the Lotus Biscoff biscuits around the top and sprinkle on the gold stars.
11) Melt the 2tbsp Biscoff Spread in the microwave for 10 second to loosen it slightly, then use a teaspoon to drizzle it over the cake. 
12) You're all done - now time to celebrate and enjoy a slice.

  1. Firstly yum! Secondly double yum! This looks incredible, there really is something about Lotus Biscoff, I’ve recently bought the spread but had to hide it from the kids as they just take a spoon to it!

  8. I loved this post from the title alone. I love Lotus biscuit spread. I made brownies swirled with it that was amazing. And my partner loves putting a spoonful into smoothies. I'm definitely saving this recipe, I've been looking for a cake to make for my birthday and this might be the one!
