EDIBLE GIFT: Golden Honey Granola

Last Christmas I made a couple of edible gifts for family and friends, I just find it such a personal present that you've obviously put a lot of effort into. I made lemon curd and strawberry jam last year, it was obviously the 'conserve' year in my mind! This year I've decided to branch out and experiment with other edible gifts. On the run up to Christmas I will be posting a range of edible gifts that will hopefully inspire you to have fun in the kitchen.
This is a recipe for Golden Honey Granola, which is inspired by Tom's parents. Recently they have started making their own muesli for breakfast, so I thought it would be a nice idea to make them some homemade granola for Christmas.    

What you'll need:
(all of these measurements can easily be changed depending on your preferences, as can most of the ingredients. There really needs to be oats, honey, butter and sugar - everything else can be changed/adapted). 
6 cups rolled oats
1 cup sliced almonds
1/2 cup sunflower seeds
1 cup dried cranberries
1/2 cup sultanas or raisins
1 cup chopped dried apricots
1 cup light-brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
50g unsalted butter
3/4 cup honey

What to do:
1) Preheat oven to 200'C. In a large bowl, mix together all  of the ingredients, except the butter and honey.

2) Over medium heat, melt the unsalted butter. Stir in the golden honey.

3) Next, pour over oat mixture and mix well to ensure that it's evenly distributed.

4) Spread the granola onto a baking tray that has been covered in greaseproof paper. Bake it for 35-40 minutes, stirring occasionally, until oats are toasted and sugar begins to caramelise.

4) Remove from the oven and let it cool completely.

5) To make this feel extra special I popped it into a Kilner jar and tied a homemade label around the neck of the jar.
