I've got another healthy recipe for you today! As a vegetarian it can be hard to get enough protein in my diet but thanks to Quorn and their fantastic range of products it's made a lot easier. A while ago I saw a mushroom stroganoff recipe on the Quorn website and was very tempted by it, so when I got home I attempted to make it. However, thanks to our internet not really working for a couple of days I couldn't load the recipe. Hence this recipe being created! Although it's very creamy, it actually doesn't have any cream in and the base of the sauce is in fact water. Even if your not a vegetarian Quorn is a great, low calorie alternative to meat, so enjoy!
What you'll need:
200g Mushrooms, chopped
200g Quorn Chicken Pieces, I used frozen
1 pot of Fat-Reduced Crème Fraiche
3 Red Onions, sliced
2 tbsp Cornflour
1 Vegetable Stock Cube
300-400ml Boiling Water
2 tsp Dried Chilli Flakes
3 tsp Dried Thyme
Black Pepper
FryLight
What to do:
1) Over a medium heat, fry the onions and Quorn chicken pieces with FryLight. Keep a lid on the saucepan, as this reduces how much oil/FryLight you need to use. After 10 minutes add the chilli, thyme and black pepper.
2) Once the onions and Quorn chicken pieces are almost cooked, add the mushrooms and remove the saucepan lid. Cook for a further 5-8 minutes. Stir in the cornflour and cook for 1 minute.
3) Crumble the stock cube in and gradually add the boiling water. Simmer for 10-15 minutes. Stir in the crème fraiche, simmer for a further 3 minutes and serve. You can serve this with crusty bread, rice, mashed potato, couscous or by itself!
