These
are the quickest and easiest Christmas cupcakes; you can whip a batch up in
well under an hour! Perfect for us busy parents who simply don't have the time to
lovingly mould mini snowmen and reindeers out of icing (I miss those days!)
Older children may even enjoy being part of making these cupcakes, so one for
the whole family to enjoy. The little reindeer cupcake stands were from
Lakeland and help to make a relatively simple cupcake look a bit more special,
with minimal effort from you! They don't seem to sell these anymore, but there
are plenty of other individual Christmas cupcake cases out there for very
affordable prices like these, these or this.
What you'll need:
(Makes 12 large
cupcakes)
Betty Crocker Victoria
Sponge Cake Mix
180ml Water
3 Medium eggs
6 tbsp Vegetable oil
Edible Snowflake Wafers (£2.99 from Lakeland)
1x tub Betty Crocker Vanilla Buttercream Style
Icing
Cupcake sprinkles, whichever style you'd like
12x Cupcake cases
What to do:
1) Preheat the oven at 180'C. Combine the water,
eggs, cake mix and oil together in a bowl until completely smooth.
2) Put the 12 cupcakes cases into a cupcake tray
and evenly spoon in the cake mixture.
3) Bake for 20-25 minutes or until golden brown
and cooked all the way through.
4) Leave to cool on a wire rack. Once completely
cool you can either pipe or spread on the icing. I spread it on with a spatula
and then made it textured to look like snow.
5) Sprinkle over whichever sprinkles you've
chosen and stick a few of the edible snowflake wafers into the top of each
cupcake.
6) Enjoy with a cup of
tea (preferably when babies/children are sleeping!)
