FINGER FOOD: Blueberry and Oat Bars Recipe

As it's Breakfast Week this week I thought I'd publish one of Isabella's favourite breakfast finger foods. I had been wanting to make Isabella some oat based breakfast bars for a while, but was struggling to find any recipes that weren't full of sugar. So I made these blueberry and cinnamon oat bars, though you could easily replace the blueberries with any other soft berries if you'd prefer. They went down extremely well with Isabella, even if a bit messy!
What you'll need:

Handful of fresh blueberries

2 Handfuls of porridge oats

Splash of full fat milk

125g Greek yogurt

Sprinkle of cinnamon, optional



What to do:

1) Preheat the oven at 180'C. Line a small ovenproof dish with greaseproof paper.

2) Combine the oats, milk and yogurt together to create a thick mixture.

3) Spread half of the mixture onto the base of the ovenproof dish. Sprinkle over the blueberries to create a layer.

4) Spread over the other half of the mixture, sprinkle with cinnamon if using and gently press in the last few blueberries onto the top.

5) Bake for 20-25 minutes or until it feels firm and springs back if pressed. Allow to cool.

6) Once completely cool cut into bars and let your little one enjoy them!

    1. Very tasty! If you fancy them a bit sweeter you could add maple syrup or a drizzle of Sweet Freedom, which is completely natural :)

    1. I've personally not tried freezing them, but I would imagine not as the blueberries may go a bit mushy!

    1. I wouldn't imagine so because I think the blueberries would go really squashy in the middle - they're best enjoyed fresh :)

  12. I froze them and they were great! Did a single layer of oat mixture and then pushed blueberries on top! Microwaved the frozen bars for 30sec and they were good to go!

    1. I can't see why not, although they will be messier as they don't have quite the same structure :)
