Seed and Bean have created an exciting range of Fairtrade, vegan and organic artisan chocolate that is handmade in England. They have an array of flavours in Extra Dark Chocolate, Fine Dark Chocolate, Rich Milk Chocolate and Creamy Milk Chocolate, such as Coconut & Raspberry, Chilli & Lime, Lavender, Mint, Coffee Espresso, Raspberry & Vanilla, Lemon & Cardamon and Tangerine to name a few. As you can see their flavours are unique and perfect for adding a delicious twist to your baking. Which is exactly what I've done for this recipe for Blondies, the white chocolate version of brownies if you're not familiar with them. So tasty!
What you'll need:
1 cup Unsalted butter
4 Eggs
2 cups Caster sugar
1 tsp Vanilla extract
2 cups Plain flour
1 tsp Salt
1 bar of Seed and Bean Lemon and Poppy Seed White Chocolate*, broken into chunks
(If you like your blondies really chocolatey then you could use two bars!)
What to do:
1) Preheat the oven to 190'C and line a brownie tin with greaseproof paper. Melt the butter and 1/2 of the chocolate in a microwave until melted. Just be careful not to burn the chocolate, so it's best to do it in 20 second blasted. Let it cool.
2) Whisk the eggs, sugar and vanilla extract until light, creamy and smooth. Stir in the cooled butter/chocolate mixture, flour and salt.
3) Pour the mixture into your lined tin and sprinkle with the rest of the chunks of Lemon and Poppy Seed chocolate.
4) Bake for 30-50 minutes, depending on the size of your tin. Mine was on the smaller side making the blondies thicker and therefore taking about 50 minutes to cook. Use a cocktail stick to check if it's cooked, you may need to cover it with foil to stop the top from burning.
5) Once cooked remove from the oven and allow to cool on a wire rack. Once almost completely cool cut into squares and enjoy!
