RECIPE: Churros with Sea Salt and Lime Chocolate Sauce

Churros are typically served with a nice, dark chocolate sauce however when I received this Seed and Bean Sea Salt and Lime Milk Chocolate I knew it would be perfect! It's a sweeter alternative yet the hit of lime and slight saltiness really helps to cut through the fatty churros. This sauce can also double up as a very luxurious hot chocolate, the kind you find on the ski slopes of Italy. Thick, creamy...the best kind of hot chocolate if you ask me!
What you'll need:
for the churros
50g Butter, melted
1/2 tsp Vanilla extract
250g Plain flour
1 tsp Baking powder
1 litre Sunflower oil
for the cinnamon sugar
100g Caster sugar
2 tsp Cinnamon (optional)
for the chocolate sauce
1 Bar of Seed and Bean Sea Salt and Lime Milk Chocolate*, broken into chunks
50ml Double cream
50ml Full fat milk
1 1/2 tbsp Golden syrup
1/2 tsp Vanilla extract 

What to do:
1) To make the churros - measure out 350ml of boiling water into a jug and add the melted butter and vanilla extract. Sift the flour and baking powder into a large mixing bowl, with a pinch of salt. 
2) Make a well in the centre of the flour and pour in the contents of the jug, very quickly beating it into the flour with a wooden spoon until it's a smooth consistency. 
3) Let the mixture rest for 10-15 minutes, while you're making the sauce. 
4) To make the sauce - put all of the ingredients into a pan and gently melt together, stirring every now and again. It will become smooth and shiny, at which point just keep it on a very low heat.
5) Fill a large deep saucepan with one-third of the oil and heat until a small lump of bread browns in 45 seconds. Cover a tray with kitchen roll and mix the caster sugar and cinnamon sugar ready to cover the cooked churros in.  
6) Using a star nozzle on a piping bag filled with the rested dough mixture, pipe 2-3 strips directly into the pan snipping off each dough strip with scissors. Fry until golden brown and crisp, remove with a slotted spoon and place on the kitchen paper lined tray. Sprinkle with the cinnamon sugar and repeat the process until you've run out of dough.
7) Serve with the warm chocolate sauce.
