Happy Pancake Day!!
In honour of Pancake Day this week's weaning recipe is a {no added sugar} tropical twist on classic american pancakes. It's the perfect way for your little one to explore different textures and flavours, just try not to eat them all yourself! If you do happen to have any pancakes left over just place them into a freezer bag and pop in the freezer. You can then defrost them overnight or in the microwave for a quick breakfast option. Every day can be pancake day now!
What you'll need:
for pancakes
1 Egg
1 cup Self-Raising Flour
1 tsp Baking powder
1 cup Full fat milk
7 tbsp Dessicated coconut
1 tbsp Coconut oil
for mango purèe
1 Mango, peeled and diced
Squeeze of lime
What to do:
1) Mix all of the pancakes ingredients together in a large bowl. Set aside.
2) To make the mango purèe add the mango pieces and lime juice into a blender. Blend until almost smooth.
3) Place a large frying pan over a medium/high heat, add the coconut oil and wait until melted.

Spoon in the pancake mixture to create small individual pancakes. Cook
on one side for about 2 minutes, or until golden brown. Flip and cook
for a further 1 minute on the other side.
5) Remove from the pan and leave to cool slightly on some kitchen roll.
6) Serve the coconut pancakes with a spoonful of mango purèe for a tropical pancake day!
