Homemade houmous is such a versatile recipe and so easy to make! You can change the roasted root vegetables for pretty much anything you like - roasted red pepper, homemade pesto, fresh herbs, pea & mint etc. It's a great way of introducing exciting new flavours to your little one and you can enjoy it too. The shop bought versions have salt in, which is why I go down the homemade route for Isabella - she loves it with pitta bread. You could also serve this houmous with falafel or homemade vegetable crisps.
What you'll need:
1 can of Chickpeas, drained
3 Carrots, peeled and cubed
2 Parsnips, peeled, centre removed and cubed
2 Sweet potatoes, peeled and cubed
1 Onion, peeled and cut into wedges
2 Garlic cloves, crushed
2 1/2 tbsp Olive oil
2 tsp Ground coriander
2 tsp Ground cumin
1/2 Lemon, just the juice
2 tbsp Tahini
Boiled water
What to do:
1) Place all of the ingredients into a food processor and blend to the consistency you desire.
2) Serve with vegetable sticks and slices of pitta bread.
