RECIPE: Banana and Apple Loaf Cake

Over-ripe bananas are no longer discarded in our house, I've discovered the world of endless recipes for those brown bananas that just don't look very appealing anymore. I absolutely love banana cake, but it is often filled with various types of sugar. We therefore choose not to give it to Isabella, that was until I whipped up this banana and apple cake that is free from refined sugar. We have an abundance of apples in our garden, so I'm constantly trying to find ways of getting them into our cooking or baking. By adding homemade apple puree to this recipe it keeps the sponge moist and sweetens it up.
What you'll need:
4 tsp Puréed apple (boiled apple chunks in water until soft and blitzed)
125g Wholemeal self-raising flour
125g Self-raising flour
3 Very ripe bananas
125g Unsalted butter
2 Eggs
1 tsp Ground cinnamon
2 tbp Runny honey

What to do:
1) Preheat the oven to 180'C. Grease a loaf tin and line with greaseproof paper.
2) Mash the bananas in a mixing bowl, so that it is mostly smooth. Mix in the apple puree until it's combined.
3) In a separate bowl beat the butter until it is light and cream. Beat in the eggs, one at a time and fold in the flours, cinnamon and banana/apple mixture.
4) Spoon into your lined loaf tin and bake for 30-40 minutes, or until a skewer comes out clean.
5) Leave to cool on a wire rack. Enjoy while still slightly warm.

  1. this is one of my staple recipes. I make it very similar to you but I use wholemeal flour, the bananas mask the taste so I find it a good way to get bran into the kids! #TwinklyTuesday
