Today marks the start of Caribbean Food Week and to help celebrate it I have put together three delicious recipes that make a totally tropical breakfast or even sweet treats for dessert. Caribbean food is full of flavour with ingredients such as coconut, mango, pineapple and jerk seasoning all working together to create refreshingly flavoursome meals. A lot of the Caribbean recipes you find on the internet are full of spice, which is absolutely delicious for us adults but children may not appreciate it so much. This is why I decided to put together a Caribbean breakfast for Isabella and Poppy, filled with Caribbean fruits and flavours they love.
Aldi has an incredible range of fresh fruit and ingredients to help us all celebrate National Caribbean Week, including fresh mangoes, pineapples, coconut chips, yogurt, honey, rum and limes. All at affordable prices, making it the perfect time to try something new.
Honey Glazed Pineapple with Coconut Yogurt and Lime
The first recipe is seriously simple and works well as a dessert or breakfast item. You'll only need four ingredients, yet it creates a child-friendly treat that is one of their five-a-day and the creamy yogurt balances out the acidity of the pineapple perfectly.
What you'll need:
(Serves 4)
1/2 tub Coconut Yogurt
1 Fresh Pineapple, peeled, cored and sliced
30g Butter
2 tbsp. Honey
1 Lime
2 tbsp. Coconut Rum (optional addition if making for adults)
What to do:
1) Place a small amount of the butter into a hot saucepan and caramelise each side of the pineapple slices in batches.
2) Remove the pineapple slices and set aside. Place the rest of the butter, honey, juice of the lime and rum (if using) into the saucepan and lower the heat.
3) Bring to the boil and reduce down until it is a syrup consistency.
4) Add the pineapples back into the saucepan to warm through. Serve with a dollop of coconut yogurt, zest and a wedge of lime.
Mango and Coconut Pancakes
You can't really go wrong with pancakes can you? They're a crowd pleaser and this Caribbean twist is the perfect way to enjoy all of the tropical flavours and an excuse to enjoy pancakes for breakfast! These pancakes are more of a crepe style, but you could always make American style pancakes instead if you prefer or if you want to make life even easier then Aldi have sweet pancakes in the fridge section that are ready to be topped with mango and coconut.
What you'll need:
(Serves 5)
100g Plain Flour
2 Eggs
300ml Milk
1 tbsp. Vegetable Oil
1 tsp Cinnamon
1 Mango, peeled and cubed
5 tbsp. Desiccated Coconut
1 Lime
Sugar
What to do:
1) Add the flour, eggs, cinnamon, milk and vegetable oil into a bowl and stir/whisk into a smooth batter. Leave to rest for at least 30 minutes.
2) After 30 minutes stir in 3 tbsp. of desiccated coconut into the pancake batter. Heat a frying pan over a medium heat, brush with vegetable oil and cool each pancake until golden brown on each side.
3) Serve the pancakes with sugar sprinkled inside and topped with diced mango, lime zest and desiccated coconut.
Jamaican Porridge
Traditionally Jamaican Porridge would be made with yellow corn meal, but I've made it with the slightly more accessible porridge oats. There is no stodgy porridge here, instead you're treated to a spice infused comforting coconut porridge. It's filled with flavour and is such a comforting start to the day, ideal for the cooler months approaching. You could also make this with semolina too and simply adjust the cooking time slightly.
What you'll need:
(Serves 2)
1 cup Water
1 cup Coconut Milk
1/2 tsp Ground Cinnamon
1 cup Porridge Oats
1 tsp Vanilla Extract
1/4 tsp Nutmeg
1/4 cup Condensed Milk
Honey, to serve

What to do:
1) Add the water, coconut milk, condensed milk and porridge oats into a large saucepan, along with the cinnamon and nutmeg. Bring to the boil.
2) Reduce the heat and cook for around 5 minutes, so that the mixture is thickened.
3) Add the vanilla extract. Adjust the consistency by adding more coconut milk or water to get it how you like.
5) Serve with slices of fresh mango, blueberries and a drizzle of honey.
Three delicious recipes that will get you ready for the day ahead, are packed with flavour and suitable for the whole family. We also enjoyed Aldi's Orange, Mango and Passionfruit Smoothie with our breakfast, which Isabella absolutely loved as a treat.
