RECIPE: Tomato, Basil and Homemade Mozzarella Bruschetta

 
When I made my own mozzarella using The Big Cheese Making Kit (see post here) I was so excited to make my first dish using it! I decided to keep it pretty simple and made one of my favourite Italian starters - bruschetta. The fresh flavours, vibrant colours and contrast between hot and cold makes for a perfect starter to any meal.
 
What you'll need:
(Serves 2)
 
1 crusty roll, sliced in half
Handful of cherry tomatoes, sliced
Basil, hand torn
40-50g Mozzarella, hand torn
1 clove Garlic, crushed (optional)
Balsamic Vinegar (optional)
 
What to do:
 
1) Put the tomatoes, basil, mozzarella and garlic/balsamic vinegar (if using) into a bowl and mix well. 

Here's the mozzarella cheese I made!
 
 
2) Grill the roll until it's golden brown, pile on the tomato mix and enjoy! It really is that simple.
 
 
 
There you have it, a fresh, quick and light starter perfect for any occasion.

  2. I Love italian food, but would you believe this - I hate tomatoes! I know, its ridiculous, but something about whole tomatoes freaks me out. This recipe looks really good though (mozerella..mmm)
