When I made my own mozzarella using The Big Cheese Making Kit (see post here) I was so excited to make my first dish using it! I decided to keep it pretty simple and made one of my favourite Italian starters - bruschetta. The fresh flavours, vibrant colours and contrast between hot and cold makes for a perfect starter to any meal.
What you'll need:
(Serves 2)
1 crusty roll, sliced in half
Handful of cherry tomatoes, sliced
Basil, hand torn
40-50g Mozzarella, hand torn
1 clove Garlic, crushed (optional)
Balsamic Vinegar (optional)
What to do:
1) Put the tomatoes, basil, mozzarella and garlic/balsamic vinegar (if using) into a bowl and mix well.

2) Grill the roll until it's golden brown, pile on the tomato mix and enjoy! It really is that simple.

ReplyDeleteI Love italian food, but would you believe this - I hate tomatoes! I know, its ridiculous, but something about whole tomatoes freaks me out. This recipe looks really good though (mozerella..mmm)
