FINGER FOOD: Broccoli, Tomato and Cheese Muffins Recipe

Now that we have become more established with Isabella's weaning and she is getting better at eating a variety of flavours and textures I'm starting to experiment more with recipes. We have been combining baby led weaning with parent led weaning, so every mealtime I will give Isabella a puree or mashed fruit/vegetable and some finger food.
At breakfast this would typically be toast or fruit, lunch would be vegetable sticks or bagel with cream cheese and dinner would be cooked vegetable sticks (like sweet potato wedges). As Isabella is now 7 months I've started increasing the variety of finger food, she's actually getting so much better at eating the food rather than just mushing it up too. I wanted to make healthy, savoury finger food that I could cook a batch of and keep in the freezer for days when time is limited. Hence baking these broccoli, tomato and cheese muffins - you could always swap the tomatoes for another vegetable if you prefer.
What you'll need:
225g Plain Flour
180ml Full Fat Milk
1 Large Egg
250g Broccoli, chopped
140g Mild Cheddar Cheese (reduced salt if possible), grated
6 Cherry Tomatoes, finely chopped
3 tbsp Olive Oil
3 tsp Baking Powder

What to do:
1) Preheat the oven at 190'C. Place muffin cases into a muffin tin - you can either make mini muffins or larger ones, it's completely up to you.
2) Steam/boil/microwave the broccoli until well cooked - I microwaved it in a cling film covered large bowl for 5 minutes. Once cooked mash it with a fork.
3) Add the flour, cheese and baking powder into the mashed broccoli and mix well.
4) Then add the oil, milk, tomatoes and egg into the mix and combined completely. 
5) Spoon the mixture into the muffin cases and bake in the oven until golden brown. I made some mini muffins, which took 20 minutes and some 'normal' sized muffins that took 25-30 minutes.

  2. These sound great, would be great for any age to get some veggies in kids! And I've been looking for some healthier sugar free snacks for my son, who's 2 and a half. May have to make a batch of these and freeze them. Thanks for sharing! x
