WEANING: Cheesy corn cakes with an avocado salsa

 
The combination of cheese, avocado and sweetcorn is a winner in my eyes. I've actually enjoyed this recipe for lunch on many occasions, it's so nice when Isabella and I can eat the same things. These are pretty much made up of store cupboard ingredients, making them ideal for quickly whipping up at lunch time or for a quick tea. Finger food lunches are a favourite in our house and Isabella loves that she can eat these completely independently. To make these corn cakes I chose to use wholemeal flour for added fibre, though it isn't necessary.


 
What you'll need:
(makes 5 corn cakes)
for corn cakes
3 tbsp Wholemeal Self Raising Flour
1 Egg
Splash of Full Fat Milk
20g Mild Cheddar Cheese, grated
1/3rd Can of Sweetcorn
Fresh Coriander, optional 
1/2 tbsp Olive Oil
for avocado salsa
(enough for one/two portions)
1/2 Avocado, finely diced
2 Cherry Tomatoes, finely diced
Squeeze of Lime
Fresh coriander

What to do:
1) Mix the flour, egg, cheese, sweetcorn and coriander together in a bowl. Stir in enough milk to create a mixture the consistency of thick double cream.
2) Heat the olive oil in a frying pan and spoon in the mixture to create whichever shape corn cakes you'd like. I made round ones, but rectangles would work well as they'd be easy for little hands to hold. 
3) Fry on one side for about 2 minutes or until golden brown, flip and cook for a further 2 minutes on the other side. Set aside.
4) To make the avocado salsa just combine all of the ingredients and serve with the slightly cooled corn cakes.

  2. Love this - have pinned :) We have a lot of finger food as it always seems pretty successful. We make dips like guacomole and hummus with pitta bread and raw carrots etc. We love salsa too! #MinisMeals.
