RECIPE: {No Added Sugar} Berry and Almond Slices


The inspiration for this recipe was the classic Bakewell tart, with its frangipane topping and jam layer. Instead of having a sugar and fat filled frangipane I made this topping out of just egg whites, vanilla extract (though you could use almond extract) and ground almonds. It creates a crispier layer, so I recommend doing quite a thing layer across the jammy base. These also freeze well, so are ideal for making in batches to stock up the freezer with.


What you'll need:
100g Porridge oats
4 tbsp Greek or natural yogurt
1 tbsp Maple syrup
1/2 tsp Cinnamon
3 tsp Dried raspberries
6 tbsp Homemade Berry Chia Seed Jam (see recipe here)
100g Ground almonds
1 tsp Vanilla Extract
1 Egg white

What to do:
1) Preheat the oven to 190'C. Mix together the porridge oats, yogurt, maple syrup, cinnamon and dried raspberries until combined.
2) Press into a lined baking dish and bake for 5 minutes.

3) Spread the Berry Chia Seed Jam over the baked oat mixture. 

4) To make the almond topping whisk the egg white until it creates firm peaks. Gently fold in the ground almonds and vanilla extract. 
5) Press the almond mixture on top of the jam and bake for 15-20 minutes or until the almond mixture is set and slightly golden. 
6) Leave to cool slightly then cut into slices. Enjoy as a snack or as a breakfast treat!
