Raspberry and Coconut Slices are a classic tray bake usually made with a buttery biscuit base, sweet layer of jam and crispy layer of coconut to finish. As delicious as these are they are laden with sugar and fat, so if you're looking for a healthy version then this is the recipe for you! The base is made from oats, the jam doesn't have a single grain of refined sugar and there's still that delicious coconut crunch on top.
What you'll need:
100g Porridge oats
1/2 tsp Cinnamon
4 tbsp Greek or natural yogurt
2 tsp Maple syrup
3 tsp Dried raspberries, optional
4 tbsp Homemade Berry Chia Seed Jam (see recipe here)
2 tbsp Dessicated coconut
What to do:
1) Preheat the oven to 180'C. Mix the oats, cinnamon, maple syrup, dried raspberries and yogurt in a bowl to create a mouldable mixture.
2) Press it into a lined baking dish and baked for 5 minutes.
3) Spread the Berry Chia Seed Jam over the baked oat mixture and bake for a further 10 minutes.
4) Remove from the oven and leave to cool slightly. Sprinkle over the desiccated coconut.
5) Once completely cool cut into mini bite size pieces and enjoy!
