SUMMER RECIPE: 3 Ingredient Mango and Strawberry Ice Lollies



Summer seems to have finally arrived and this calls for picnics, frozen treats and all the ice-cold drinks. I'm not the biggest lover of the hot weather, but what I do love is that you can eat outside all day and into the evening. Now that used to be such a relaxing experience, but with two children there is no time to relax these days.

That is unless Isabella has something to eat, namely an ice lolly. We try to keep her refined sugar intake as low as possible, so we make these three ingredient Mango and Strawberry Ice Lollies together quite often. Isabella helps to put the fruit in the blender, spoon in the purees and place them in the freezer. The understanding that we then have to wait isn't her strongest point, but she's got to learn and what better way than with a tasty frozen treat at the end? 


Ice lollies are such easy things to make with so many ways of making them adult friendly too. Just add in a glug of your favourite tipple, not too much though otherwise it won't freeze. Also, some tips for bringing the cost of making these ice lollies down:

  • Buy reduced fruit and make the ice lollies that day
  • Use tinned fruit in fruit juice rather than fresh
  • Use frozen mango/strawberries instead of fresh
  • Choose the 'imperfect strawberries' you can now find in Tesco
  • Keep an eye out for when the fruits are on offer
  • Use water instead of fruit juice (they'll just be less sweet)

  • Use smaller ice lolly containers so you can make more

What you'll need:
(Makes 8-10 ice lollies, depending on your container size)
1 Ripe Mango, peeled and chopped
150g Strawberries, topped and chopped
100-150ml Orange and Mango Juice

What to do:
1) Add the chopped mango and most of the juice to a blender and blitz until smooth. I do this with a hand blender because there isn't much to blend. Pour into a container and set aside.
2) Rinse the blender. Add most of the chopped strawberries (save a few chopped pieces to add in to the ice lollies) and the remaining juice (just enough to help them blend) to the blender and blitz until smooth.
3) Spoon in the mango puree into your ice lollies containers first, then a layer of strawberry puree, next chopped strawberries and then repeat until each container is full. Replace the ice lolly handles and place in the freezer for at least 5 hours, but preferably overnight.
4) Once they're frozen you'll need to warm the outside up with your hand, pull away the container and enjoy the ice lolly in the sunshine.
