What's not to love about an ice-cream sandwich? There's often ice-cream, TWO biscuits, chocolate, sprinkles...the list of goodness goes on. The only problem I often find with them is that as soon as you take that first bite the biscuits crumble into pieces or push the ice-cream out of the middle. They're often too hard for the soft ice-cream centre, which is where these Hot Chocolate Brownies step in. They're light, chewy and make eating an ice-cream sandwich an absolute dream. To be honest they're delicious by themselves and this recipe does make a fair few, so you can enjoy them with a cup of tea on cooler days and with an ice-cream centre on warmer ones.
What you'll need:
30g Cocoa Powder
55g 70% Cocoa Hot Chocolate Powder
400g Caster Sugar
125ml Sunflower oil
4 Eggs
2 tsp Vanilla Extract
250g Plain Flour
2 tsp Baking Powder
70g Icing Sugar
Your favourite ice-cream
Sprinkles, optional
What to do:
1) In a bowl mix together the cocoa powder, hot chocolate powder, caster sugar, sunflower oil until fully combined. Crack in an egg at a time and mix well. Then stir in the vanilla extract.
2) Sift the plain flour and baking powder into the chocolate mixture and combine. Cover with cling film and place in the fridge for a couple of hours, which helps to make the mixture more solid and easier to roll in the icing sugar later.
2) Preheat the oven to 180'C. Line some baking trays with greaseproof paper. Remove the mixture from the fridge. Pour the icing sugar into a bowl and using two teaspoons scoop out a gold ball size amount of the mixture, roll in the icing sugar until completely coated and transfer to the lined baking trays. Repeat until you've used all of the mixture up. Make sure you leave a big enough gap between each one to let them expand.
3) Bake for 10 minutes. Leave to cool for a couple of minutes, before transferring to a wire rack to cool.
4) Once completely cool you can add a scoop of your favourite ice-cream to the back of one of the brownie/cookies, then sandwich another on the other side. The texture is light and airy, so they wont crumble or squeeze the ice-cream out when you bite into your ice-cream sandwich.
