RECIPE: Peach and Raspberry Dutch Pancake

Pancakes are glorious whatever the day, time or season, but especially at the beginning of the year. Pancake Day is around the corner, warm comfort food is needed and spring is on the horizon. American pancakes, crepes and scotch pancakes are all pretty common, but have you tried a Dutch pancake? Think Yorkshire pudding vibes with a sweet twist; absolutely heavenly topped with jam for sweetness, fruit for freshness and yogurt for creaminess. The good news is, they are also very easy to make and don't require standing at the hob individually turning each pancake. 
In this recipe I've used Santa Rosa Peach Conserve, which is an Italian conserve made with the best ingredients and is full of flavour. What you'll need:
1/2 cup Plain Flour
1/2 cup Full Fat Milk
2 Large Eggs
2 tbsp. Granulated Sugar
1 tsp. Vanilla Extract
2 tbsp. Unsalted Butter
1 Peach, sliced
Handful of Raspberries and Blueberries 
Icing Sugar 
Greek yogurt, optional 


What to do:
1) Place to flour, milk, eggs, sugar and vanilla extract into a food processer and blend for 20 seconds. 
2) Leave the batter to rest in the food processer for around 20 minutes to allow it to thicken up. Preheat the oven to 220'C. 
3) You can use either a frying pan that can be put in the oven or a round cake tin. Place your tin of choice into the oven to heat up. Once the tin is hot add the butter and place back in the oven for 1-2 minutes. 
4) Remove the hot tin from the oven and pour in the batter, tilting the tin as you do so that the batter goes up the side.
5) Return the tin to the oven and bake for 15-20 minutes or until golden brown and puffed up.
6) A Dutch pancake is best served straight away. To finish it off spread the Peach Conserve over the middle, arrange the peach slices, blueberries and raspberries on top and sprinkle with icing sugar. Then enjoy!

  7. I have never had Dutch pancakes before. I like blueberry pancakes but that is the extent of the fruit I like on them. It certainly looks interesting though.

  8. I’ve never tried Dutch pancakes and I’m not a huge pancake lover but I do love the sound of using the peach conserve which would go well I think with a lot of other baking recipes maybe a tart filling?
