RECIPE: Giant Chocolate Chip Sharing Cookie

RECIPE: Giant Chocolate Chip Sharing Cookie
If you're after indulgence in the form of a gooey, chocolatey, warm cookie then this is the recipe for you. I made this for some friends that were coming over for a dinner party and have since made it three more times...it's addictive. The key is not to overcook it, the gooey almost cookie dough texture makes it even more luxurious. I used milk and white chocolate though you could use your favourite chocolate, why not mix it up with some ginger dark chocolate or raspberry white chocolate? Delicious.

What you'll need:
(Makes 2 large cookies or 1 giant cookie)
3/4 cup Melted unsalted butter
1 cup Light brown sugar
1/2 cup Granulated sugar
1 egg
1 egg yolk
2 cups Plain flour
3/4 tsp Bicarbonate of Soda
2 tsp Vanilla extract
3/4 cup Chocolate chips
100g White chocolate, broken into chunks

What to do:
1) Preheat the oven to 180'C. Mix together the melted butter and two types of sugar in a large mixing bowl.
2) Add the vanilla extract, egg and egg yolk. Combine until the mixture is smooth.
3) Fold in the flour and bicarbonate of soda until fully combined.
4) Stir in the chocolate chips and white chocolate chunks. Spread evenly into an ovenproof dish.
5) Bake for 12-15 minutes - do not overcook! Leave it to cool for 10 minutes and then devour with a big scoop of ice-cream and fresh berries.

What's your favourite cookie flavour?

  1. Looks yum... and the bigger the better! I love cookies so as my kids. We always buy cookies every time we go to subway for lunch. Me and my husband love macademia cookies while kids love the rainbow cookies. #PicknMix
