RECIPE: Soft Baked Earl Grey and Sultana Cookies


I'm not sure if 'cookie' is the best thing to call these, but I'm not sure what else to call them either. The texture is soft and airy with a crisp outer shell, a much lighter version to your standard chewy cookie. They go perfectly with a cup of tea or crumbled over vanilla ice-cream on these summer evenings. These are best eaten fresh from the oven (and cooled slightly), as they will dry out pretty quickly after a day or so. The perfect excuse to invite your friends/family around to enjoy a batch!

What you'll need:
Makes 10 cookies
200g Self Raising Flour
1 tsp Baking Powder
2 tsp Mixed Spice
100g Unsalted Butter, cut into chunks
150g Sultanas or raisins
85g Light Brown Sugar
1 tbsp. Milk
2x Earl Grey Tea Bags
Boiling Water

What to do:
1) Preheat your oven to 180'C. Line a baking tray with greaseproof paper and set aside. Put the sultanas in a bowl, along with the two tea bags and just enough boiling water to cover them. Leave to soak for 10-15 minutes. Then drain the sultanas, keeping back the earl grey tea liquid for later.

2) To a bowl add the flour, baking powder and mixed spice. Mix well and then add the butter and rub it in until the mixture resembles breadcrumbs.
3) Mix in the light brown sugar, drained sultanas, egg, 1 tbsp. of the earl grey liquid and 1 tbsp. milk. Spoon the mixture onto your lined baking tray, ensuring you leave big enough gaps for each cookie to expand. Sprinkle with extra light brown sugar if you'd like.
4) Bake for 15-20 minutes. Transfer to a wire rack to cool completely.

I'll warn you - these are extremely moreish and because they're so light they can disappear pretty quickly!

  2. I have never cooked with tea before (lots of coffee though!). I don't think I've eaten anything tea flavoured either!

  4. I don't know what my thoughts are about tea to biscuits, it's not something I've ever tried, but sultana's are a great alternative to normal chocolate cookies x

  9. They sound delicious and easy to make. Do you find the tea flavour coming out? I have tried tea infused biscuits before but never really got the flavour coming through much x
