Very rarely will I make a meal, try it for the first time and already be eager to make it again. Well that happened with this recipe, it is absolutely delicious and I seriously can't get enough of it! I think it's the combination of so much flavour, that it's easy to make and pretty versatile. If you don't have green beans you could always use asparagus or sugar snap peas, if you don't like goats cheese then you can swap it for your favourite one etc.
500g pack of Gnocchi
85g Watercress
80g Green beans, trimmed and halved
A large handful of Fresh Mint
1 Garlic Clove, chopped
4 tbsp. Toasted Pine Nuts
20g Parmesan (or vegetarian alternative), grated
5-9 tbsp. Olive oil
20g Soft Goats Cheese
250g Baby Plum Tomatoes, halved and quartered
Black pepper
What to do:
1) To make the pesto add the parmesan, garlic, splash of the olive oil, black pepper, two thirds of the watercress, fresh mint and half of the toasted pine nuts in a mini blender. Blitz and then gradually add the rest of the olive oil, until you get a consistency you're happy with.
2) To a large frying pan add 1 tbsp. Olive oil and place over a medium-high heat. Add the gnocchi and fry for 10-15 minutes, or until golden brown and crispy on the outside.
3) To cook the green beans you can either boil them for a few minutes on the hob or place them in a microwaveable bowl with enough water to cover them, cover with cling film and microwave for 3 minutes. Drain and set aside.
4) Once the gnocchi is cooked, take the pan off the heat and add the homemade pesto and green beans. Leave to cook in the residual heat for 2-3 minutes, this will take the edge off the raw garlic in the pesto.
5) To your serving bowls add the rest of the watercress, baby plum tomatoes and the hot gnocchi pesto mix. Combine together well. Sprinkle with the remaining toasted pine nuts and chunks of soft goats cheese.
